Few meals hit the spot like a donair bowl. They’re just packed with colour and flavour, as well as hummus, which really ought to be plant-based food group all its own. Serve this bowl with a pita, flatbread, or rice for the ultimate donair shop experience.
INGREDIENTS
Tabbouleh
- 2/3 cup bulgur
- 1/2 red onion, finely diced
- 3 cloves garlic, chopped
- 2 tomatoes, diced
- 2 bunch parsley, chopped
- 1 bunch mint, chopped
- 1/2 lemon, juiced
- 1/4 cup extra-virgin olive oil
- salt and pepper
Garlic Yogurt Sauce
- 3 garlic cloves, finely chopped or grated
- 1 tbsp sugar
- 1 tbsp apple cider vinegar
- 1/2 cup plain, unsweetened non-dairy yogurt
- salt and pepper
Donair Bowl
- 2 tbsp grapeseed oil, or other neutral oil
- 1 package Butcher's Select Mmm Meatballs
- 2 cups cooked grain, like rice, farro, or bulgur (optional)
- 1/3 cup hummus
- Very Good Pickled Red Onions
- ½ english cucumbers, sliced
DIRECTIONS
Tabbouleh
- Cook bulgur according to package directions and cool.
- Once cooled, combine bulgur with remaining tabbouleh ingredients. Taste and adjust seasoning as desired.
Garlic Yogurt Sauce
- In a medium sized bowl, combine all ingredients. Taste and adjust seasoning as desired.
Donair Bowls
- In a medium sized non-stick pan over medium-high heat, add oil and sauté meatballs for 6-8 minutes or until golden brown with an internal temperature of 165F.
- In bowls, add grain (if using), tabbouleh and layer with meatballs, hummus, cucumbers, pickled red onions, and drizzle with yogurt sauce.
