Vegan Donair Bowl

Few meals hit the spot like a donair bowl. They’re just packed with colour and flavour, as well as hummus, which really ought to be plant-based food group all its own. Serve this bowl with a pita, flatbread, or rice for the ultimate donair shop experience.

INGREDIENTS

Tabbouleh

  • 2/3 cup bulgur
  • 1/2 red onion, finely diced
  • 3 cloves garlic, chopped
  • 2 tomatoes, diced
  • 2 bunch parsley, chopped
  • 1 bunch mint, chopped
  • 1/2 lemon, juiced
  • 1/4 cup extra-virgin olive oil
  • salt and pepper

Garlic Yogurt Sauce

  • 3 garlic cloves, finely chopped or grated
  • 1 tbsp sugar
  • 1 tbsp apple cider vinegar
  • 1/2 cup plain, unsweetened non-dairy yogurt
  • salt and pepper

    DIRECTIONS

    Tabbouleh

    1. Cook bulgur according to package directions and cool.
    2. Once cooled, combine bulgur with remaining tabbouleh ingredients. Taste and adjust seasoning as desired.

    Garlic Yogurt Sauce

    1. In a medium sized bowl, combine all ingredients. Taste and adjust seasoning as desired.

    Donair Bowls

    1. In a medium sized non-stick pan over medium-high heat, add oil and sauté meatballs for 6-8 minutes or until golden brown with an internal temperature of 165F.
    2. In bowls, add grain (if using), tabbouleh and layer with meatballs, hummus, cucumbers, pickled red onions, and drizzle with yogurt sauce.
