
For a long time, you’ve enjoyed the Burger of the Month at the Butcher Shop, but for those of you that do not have access to the Victoria storefront, we wanted to bring you a little taste to your home.
A burger is an all-American food, but of course, we’ve taken our spin on it, starting with our signature burger. It is a cruelty-free AAA Grade bean patty, loaded with organic veggies and spices, including beets, carrots, old-fashioned mustard and tahini. Pair these flavours with a juicy plant based bacon, tangy mayo and fresh slaw, and this burger will be the Apple of Your Eye.
The recipe share, and a donation to a grassroots charity are new to the Burger of the Month this October. This month charity was Home for Hooves, and we are happy to announce were able to donate $160 to the organization.
Apple of Your Eye Burger
Makes 4 servings
Ingredients
1 pkg Very Good Burgers 4 burger buns (your choice, but we love good ol’ brioche bun)
1 pkg Sharp and Sassy Cheddar Cheese by the Cultured Nut
1 pkg plant based Bacon
Sauce
½ cup vegan mayo1 tbsp apple cider vinegar
1 tsp dijon mustard
2 tsp fresh dill, chopped
Slaw
1 apple grated 1 parsnip, peeled and grated
1 carrot, peeled and grated
ÂĽ cabbage, thinly sliced
Directions
Preheat BBQ to 400*F.
Slice the bacon into 8 strips and brown in a pan for 4 - 5 minutes per side in a medium-hot pan. Slice the cheddar cheese into 12 slices and set aside.
Place burgers on the grill and cook for 6-7 minutes on each side.
While the burgers cook, in a small bowl, mix the mayo, vinegar, mustard and dill together to create the sauce. After you finish the sauce, in a medium bowl, mix the prepared apple, parsnip, carrot and cabbage together with the mayo mixture.
Arrange the burgers on each bun and top with bacon, cheese and slaw mixture.
